brain damage

The other day me and Kale were in the kitchen making cookies.
Kale loves to pour the ingredients in and mix them so it's the one time he is allowed to sit up on the counter.
I had just poured melted butter over sugar and turned to the fridge to get the eggs out.
And then... I hear Kale spit....
I turn around in time to see a big glob of spit fall right into the cookie mixture...
My first reaction was to scream, and to run over to the bowl to try and dig out the spit, but there was no use, I couldn't see it anywhere.
I then said "Kale!! What on the face of the earth were you thinking!"
To which he just looked at me and started laughing hysterically...
When things like this happen my mind always goes back to a skit from Bill Cosby Himself, and I can't help from cracking up, even when I'm fuming mad.
 Sometimes I know I look exactly how he says his wife looks.
I don't think there is a mom on the planet who hasn't looked that way at one time or another.
It's funny, when your on the cereal isle at the grocery store and your child has a mental breakdown, other mom's look at you as if to say 
"I feel your pain"
And then when the tables are turned and you see another mom or dad trying to do everything humanly possible to get the child to stop having a mental breakdown in the middle of a restaurant, you can't help but think 
"thank heavens it's not mine right now" 
and then proceed by giving her the look of 
"don't worry, I feel your pain"
I love children.
I have seen this movie countless times and each time I still end up with tears in my eyes from laughing so hard.

Here are two more skits from the movie that I couldn't help from sharing.
Best movie ever, if you ever see it, make sure and grab it, you won't regret it.
If you've got one, go give your brain damaged child a big kiss.
P.S. I may or may not have found a small, hard foreign food object in the batter while mixing the cookies, to which I quickly and silently just fished it out... And didn't tell Jon...  
What he don't know don't hurt him right?

family photo's

I'm pretty certain that everyone who reads my blog has already seen our family photos because I posted them on Facebook, but I wanted to post them on the blog as well.
I am so glad we got these done of just us three before the new baby gets here. 
Alicia Arlene did them and she is so extremely talented I love them all so much and am ordering more for her to edit.
I am dying to get some of these printed and put up in my house. 
I am so blessed to have these two in my life. They are so amazing and I truly don't know where I would be today without them and the wonderful influences they have had on my life.
I love you boys.

black friday and Thanksgiving

I am so sad that this week is over.
For the first time since our wedding three years ago the entire Ferguson family was all together.
Kale has had so much fun playing with his cousins every day.
There are 13 grandkids under the age of 6... which equals insanity at times but I wouldn't have it any other way.
This year we were lucky enough to have two Thanksgiving dinners, one with my family on Thanksgiving and then another the day after with Jon's fam.
And guess what.
I am a failure at life and succeeded at not taking a single photo of the entire weekend!
Go me!
I love all you Fergy's so much and had a blast with you all!
 Every  year me, my mom and sister go out to the Carter's store at Fashion Place mall at midnight on black Friday.
It's the only store we go to... and probably for good reason, we know how to do some serious damage between the three of us.
Jon's only comment on our outing was
"wow... you guys have problems"
In my defense it's almost a crime to not go.
Why you ask?
Maybe because I got a 65 dollar diaper bag for 13 bucks.
I know right?
You can't do much better then 80% off.
I totally feel justified.
Thanks to mama and Rach for the fun girls outing, I can't wait to do it again next year.

baby boy

I had my big ultrasound today.
There's nothing better then getting to see your little one squirming around in your tummy.
There was one downer though.
The doc told me that I am actually 22 weeks and not 24 like they had thought from the other day.
At least it's not like a month difference right?
But other then that baby boy is completely healthy and everything looks fabulous. 
He was being a bit shy, he didn't want us to see his profile so he decided to bend himself in half and hide his face.
It's hard to tell in this picture but his head is bottom left with his face pointing upwards, his torso is in the upper left corner then his arm is above his head followed by his foot  higher up.
That cannot be comfortable.
Can't wait to meet that little man.

Time for a Change

Thursday I had a doctor appointment with my new doctor.
I switched doctors because I wasn't loving my old doctor and wanted a change.
And boy am I glad I did.
My new doctor and her whole team are FABULOUS.
I feel so much more at ease.
Turns out I'm actually 23 weeks almost 24, not 21 like my previous doctor had said.
Two weeks ahead? Heck yes I'll take it. 
He never measured my stomach so he never knew, he just went off of when my last period was.
Yep, I'm glad I switched.
My old doctor was a very good doctor, he just wasn't for me.
It was funny while talking to my new doctor she asked who delivered Kale and I told her Melissa Brown, who I loved but can't go to now because she doesn't accept our new insurance.
And she said "Oh well Melissa is fabulous, I would know, I trained her."
It made me laugh, what a small world, and wow she has a lot of experience. 
 So things are looking great, let's keep it that way.

Tonight we are getting together with the ENTIRE gang, and I am so excited.
First time in over 3 years that we will all be together.
Can't wait to see you all!

Spanish Rice

 To be perfectly honest I'm almost embarrassed to post this recipe because it's so stupidly easy.
I don't even think it qualifies as a recipe.
But it is so yummy.
This is the perfect meal for your hubby to make for dinner when you are not home because it's pretty much impossible to mess up.
What you will need:
1 package of Spanish Rice
1 pound hamburger meat
1 can of corn
1 package crescent rolls (optional)
 Start by cooking hamburger meat in one pan and cooking Spanish Rice in another, according to directions on package.
Once both are done, add meat to Spanish Rice, drain corn and add as well. 
.....And that's it.
Tough I know.
Serve with some yummy crescent rolls, a side salad and your set, dinner in 20 minutes.
Don't judge, I do know how to cook with actual ingredients and recipes that involve more than four things, and I will share some soon :)
  -My poor dad completely tore his Achilles tendon this week playing basketball and had reconstructive surgery today.
I went to see him tonight and he was still pretty loopy, it did make for some fun conversations.
Get better quick dad, I love you!

Saucy Chicken and Broccoli

 This is one of those dinners that one night, I had no clue what to make, I had some ingredients and decided to throw them together and see how it turns out.
Turns out this is now one of our favorite dinners. 
What you will need:
3 chicken breasts
broccoli- about 2 1/2 cups, I never measure how much, just do how much you want
white sauce- about a cup and a half
2 cups brown or white rice
Nature's Seasoning
1 tablespoon canola oil (or vegetable oil)
Velveeta cheese (optional)
salt and pepper to taste
This is the white sauce I use and I love it.
I am finding out that lot's of people don't know what Nature's seasoning is and it makes me sad because it is the best thing ever. You can use it on pretty much any meat and it makes it fabulous.
I also love Lawry's Seasoned Salt, it is super yummy on chicken with a little pepper, try them, you won't regret it!
 Start by cubing chicken and put in hot pan with oil, sprinkle generously with Nature's seasoning, cook till lightly browned.
 Cook broccoli with about a tablespoon of salt
Make white sauce according to directions
Cook rice. 
 My mom introduced me to all natural brown rice packets from Costco that are microwaveable and the perfect amount for the three of us per packet. I haven't seen them for a while and I'm on the lookout for them to come out again so if you see them, grab a box, they are awesome.
 Put a dollop of rice on plate.
 On top of rice add your chicken and broccoli.
So that the white sauce stays warm, wait to pour over top till you are ready to sit down to eat. 
I had some Velveeta cheese in my fridge and decided to melt some into the white sauce for Jon because he loves cheesy things. It turned out really good and will probably do it to the entire pan of white sauce next time.
 Warning, it makes a lot of food, none of us finished our plates.

Hello Beautiful

 Welcome winter, and the first snow of the season, I'm really glad you are here.
Our weekend was filled with absolutely nothing but the three of us and it was absolutely perfect.
It included things like watching movies, drinking hot chocolate, the temple, snuggling, Puss in Boots, and more snuggling.
This is my most favorite time of year, I love everything about it.
I have more recipe posts on the way.
Someday I will get good at photoshop again and my pictures will look like my favorite food blogger Bree at Baked Bree.
No matter what she makes, it always looks delicious, and someday so will my recipes.
Happy best season of the year, I hope you are enjoying it as much as I am.

Pockets and a date for a snipping

December 16th is the big day for my Kale man to become a new man.
How sad.
Yet happy at the same time.
 We had the consultation for Kale's circumcision and officially set a date. 
If you are wondering why we haven't had this done already you can read about it here.
Operation potty training is on an official halt.
The doc told us that it would be smartest to wait till after the operation to start potty training to make it easier for Kale.
Here's to hoping it all goes well.
He's going to be miserable for a little while, but he's a tough little cookie.
He's been poked and prodded more than some people have in their entire lifetime.
I have no doubt that he will bounce right back from the surgery and be his crazy/sweet little self before we know it. 
Onto pockets.
I love this dinner because:
A- It's quick and easy
B- Everyone always loves it
C- It can be paired with pretty much whatever you have sitting in the pantry.
What you will need:
1 LB. hamburger meat
2 cans crescent rolls
1 small can tomato sauce
1 tablespoon chili powder or to taste
1 1/2 teaspoon garlic powder or garlic salt, or to taste and is also optional
1/4-1/2 onion finely chopped 
(my recipe calls for half of an onion but I don't like things too oniony so I use a fourth, you decide how much you want and go from there)
cheddar cheese
-Preheat oven to 375
Combine hamburger meant and onion in pan and cook till done.
 While meat is cooking get out crescent rolls and put on cookie sheet in squares.
Each crescent roll package will make four squares, pull apart at vertical and horizontal lines, not diagonal, like you would if you were making rolls.
Pinch the diagonal lines shut with your fingers to hold them together and keep food from falling out.
Once meat is cooked through, add chili powder, and tomato sauce.
Also if you are using garlic powder/salt add it now. 
The garlic powder was something that I decided to add to the recipe this time around and it came out really good, but if you don't have any or don't want to add it, it will still be yummy.
Put meat onto one side of squares and top with cheese, then fold over the other side of the squares and seal edges so it comes out looking something like this
See where I didn't pinch the diagonal lines shut all the way? It's not critical so don't go crazy.
Once all pockets are sealed put in the oven for 10-12 minutes or till the dough is golden brown and your done.
There you have it, warm and cheesy pockets, perfect for dinner when it's getting cold outside.
